Gluten-free pancakes

Many people do not tolerate gluten well. But of course, you can still make pancakes then. You hardly taste any difference, and the nutritional value is even higher than making “regular” pancakes.

Instead of (whole wheat) (spelt) flour, use chickpea flour or buckwheat flour.

Both give delicious pancakes but without the nasty effects of gluten.

Below is a simple recipe that you can actually make anytime if you have a pack of chickpea flour or buckwheat flour in the house.

You can buy both at the health food store from the brand “Ekoland,” for example.

Recipe for 2 people:

* 140 grams of chickpea or buckwheat flour

* 2 eggs

* 2 cups of goat’s milk or regular milk (if you have a lactose problem, you can replace this with water),

Or instead of 2 cups of milk, use 1 cup of milk and 1 cup of water.

* Add a little salt

* Mix 2 tablespoons of olive oil into the batter (then you don’t have to use butter in the pan)

Continue baking like regular pancakes.
